Helen’s Sandwich Bread Mix is a great, easy-bake bread only requiring water and oil. It can be baked in either a breadmaker or by hand and produces a light, soft, tasty gluten free white bread.

Ingredients

Potato Starch, Cornflour, Tapioca Starch, Flaxseed Flour*, Dried EGG White, Sugar, Sea Salt, Dried Yeast, Emulsifier: SOYA Lecithin, Raising Agents: Sodium Bicarbonate, Disodium Diphosphate, Stabiliser: Xanthan Gum

* Per Fodmap Friendly, a low FODMAP serving limit for Linseeds (aka Flaxseeds or Flaxseed flour) is 15g. FODMarket has confirmed the proportion of Flaxseeds with the manufacturer. A serving size up to half a loaf of this bread has been confirmed to be within a low FODMAP serving.

Cooking instructions

Breadmaker Method (Panasonic 2500 Gluten free dark crust setting):

  1. Warm the breadpan.
  2. Measure 300ml tepid water (100mls boiling and 200mls cold) and 1tbsp vegetable oil into the bread pan.
  3. Add pack contents and mix in with a spoon.
  4. Start gluten free programme. When finished, remove bread immediately from pan.
  5. If you need to pop in a preheated oven (200 celcius) for an extra 10 minutes.
  6. Cool completely on a wire rack, cut and enjoy.

Handbaked Method:

  1. Pour 300mls tepid water (see note above) and 1 tbsp vegetable oil int a warm mixing bowl and add pack contents.
  2. With a metal spoon, mix until the mixture is smooth and thickened.
  3. Pour int a greased non-stick loaf tin (4.5" x 9" approx) and spread evenly.
  4. Stand tin in a bowl of hand hot water (don't let the water get into the tin!)
  5. Set your timer for 40 minutes.
  6. Pre-heat oven to 200 celcius.
  7. When dough has almost doubled in size (takes about 40 minutes), pop the tin in the oven and bake for 45 minutes.
  8. Cool completely on a wire rack, cut and enjoy.

Tip:

Gorgeous on its own, or try adding fresh chopped rosemary and grated pumpkin to the mix.
