Delicious tofu in a creamy, spicy spinach and mint sauce. Cooked in jars using a particularly gentle method. Delicious on its own or with a low FODMAP carb such as rice.

This dish is inspired by the traditional palak paneer, which is very popular in North Indian cuisine as a deliciously spiced and highly nutritious vegetarian dish. By replacing paneer (homemade cheese) with tofu, the calorie content is reduced and the iron content of the dish is increased.

Directions

Heat in a saucepan for around 3 minutes, stirring occassionally.

Store in a cool dry place. Refrigerate once opened and consume within 2 days.
